Texas Taco

Dice left-over smoked meat; ribs, brisket, chicken, pork loin, etc...

1/4 cup onion

1/4 cup green pepper

1/4 cup cheese; jack or cheddar or both.

1-2 TBSP Blazing Blends Southwest Chile© spice rub

Soft tortilla shells.

Salt to taste.

Olive oil for sautéing.

Sauté onion & pepper for bout 8-9 minutes until slightly brown. Put the meat in to heat up for a minute. Put all the ingredients on the soft tortilla and salt to taste. Broil or grill until the tortilla is hard and the cheese is nicely melted.
