"BLACKENING" anything is as easy as 1, 2, 3 with our spices.  There's no recipe needed; rub any blend on your food, heat your pan to HIGH and throw it in.  Thick beef can stay on a minute or two, delicate fish for a little less.  Heat and meat thickness will change the times a little.  Don't be afraid, if you see smoke, you're doing it right.
